This santoku has a hollow ground edge on either side of the base of the blade. This allows air to enter between the blade and the item being slices, minimizing sticking and contributing to swifter slices. The “Santoku” knife is excellent for all type of food preparation just like on its name-sake the “three virtues” of meat, fish and vegetables.
